6 pears, peeled
12 dried figs, whole
1 coffee-cupful raisins
1 coffee-cupful walnuts
1 bottle sweet Samos wine
1 dessert-spoonful cinnamon, pinch of ground allspice, a few leaves of fresh marjoram (if available)

A very easy recipe, and here’s the proof. Place the pears upright in a large pan, with the figs, walnuts and raisins between them. |

Slowly pour in the wine and sprinkle with the spices. Simmer at low heat for at least one hour, until the wine has reduced by ⅔. Leave to cool.

Before serving, warm slightly till tepid. Put 3-4 spoonfuls of syrup in the bowl, 2 pears, 2 figs some walnuts and raisins.

Complete the dessert with a scoop of your favourite ice cream. I prefer kaimaki (cream with mastic), which goes very well.
