1 large pork fillet (about 700 gr.) or 2 small (350 gr. each)
3 hard apples (whatever variety you like), sliced with skin
½ teacupful olive oil
3 dessertspoonfuls sugar
salt, coarse-ground pepper

Heat the oil in a frying pan and sauté the meat for 5 minutes. |

Remove, season with salt and pepper, and place in a baking tin. Roast in a hot oven at 200 0C for 15 minutes.

Place the apple slices in the remaining oil and sauté on both sides. Sprinkle with sugar and leave to caramelize. |
|
When the fillet is cooked, cut into slices and serve with a few apple rings on each plate. Pour the sauce over the meat.
