Cover the bottom of a baking tray with salt, so that the whole fish rests on it. |

Cover the fish entirely with the rest of the salt.

Bake in the oven at 200 0C for about 50 minutes. The salt solidifies. |

Crack it with a knife and the fish is lying there under it, totally unaffected by the salt crust.

Fillet and serve with oil and lemon dressing. A salad of boiled spinach is an excellent garnish.
