Dice the potatoes, carrots and gherkins. |

Mix all the vegetables and the orange segments in a bowl. |

Add the mayonnaise slowly, mixing continuously. Press the salad in the bowl. |

Cover with a layer of mayonnaise and decorate with a few of the vegetables kept on one side.

I know that mayonnaise is not really Greek, but it is made with ingredients that are all produced in Greece.

Nobody knows why this salad is called Russian in Greece. In France it’s called macédoine (Macedonian). No matter. This version with a little sweet-sour orange is delicious.
