Once of a day Greeks only ate rocket on Shrove Monday. Very tasty and peppery, it signified the beginning of the Lenten Fast.

A simple recipe with a perfect combination of tastes. The tang of the rocket and the fleshiness of it leaves are offset beautifully by the rich flavour of the Santorini tomato. |
